Deaf Jens skinned eels in the cellar 100 years ago — and still oversees that the chef cooks them properly.
Hvalpsund Færgekro lies at the ferry crossing between Himmerland and Salling, and has been an inn as long as the ferry has crossed the Limfjord. In the early 1900s, a farmhand who was born deaf-mute but could speak and hear a little worked here. He was called Deaf Jens and had a specific task in the inn's cellar: peel potatoes, fetch water, and skin the eels that lay in a basin before they went to the kitchen.
The basin is gone and the cellar is today a wine cellar — but Jens remains. Both the owner and the staff have seen and heard him moving about down there, and several have noticed that he keeps an eye on what the chef does with the day's eels. He does not seem to have understood that his work is finished, and maintains a quiet authority over his old domain.
